Beef Enchiladas

Yield: 20 enchiladas


1 – 1 ½ lbs hamburger meat

1 medium onion, chopped

2 fresh jalapenos, chopped

4-5 (10 oz) cans red enchilada sauce

1 – 1 ½ cups of Better Than…Brand salsa (your favorite heat level)

20 corn tortillas

¾” to 1” oil

1-2 cups shredded cheese


Preheat oven to 350 degrees.


Heat oil in a skillet on high heat until it sizzles. Dip each tortilla into oil for about 5-6 seconds on each side, until softened, and transfer to a plate.


Brown hamburger meat in a skillet at medium high heat, stirring to crumble, for about 5 minutes; add jalapenos and onions. Continue browning until meat is no longer pink. Drain excess grease. Add BTB salsa and simmer to get the flavor throughout the meat, stirring as needed.


Pour enchilada sauce in a large bowl. In a 9x13x2” baking dish, spoon sauce to cover the bottom. Dip a tortilla in the bowl to coat; transfer to the pan, spoon in beef mixture, and roll up. Continue with remaining tortillas and beef mixture, arranging to fit the pan.


Spoon or pour enchilada sauce over all enchiladas, and top with a thick layer of shredded cheese.


Bake at 350 degrees until cheese is melting and bubbling.

Beef Taco Bake

Servings: 6


1 lb ground beef

1 ½ cups Better Than…Brand salsa (your favorite heat level)

1 (10 oz) can whole kernel corn, drained

¾ cup whipped salad dressing (such as Miracle Whip)

2 tsp chili powder

2 cups tortilla chips, crushed

2 cups shredded cheese


Preheat oven to 350 degrees. Grease a 9x13” baking dish.


Place ground beef in a large skillet over medium-high heat. Cook, stirring to crumble until browned; drain excess grease. Remove from heat and add salsa, corn, chili powder, and salad dressing, and stir.


Layer half of the ground beef mixture into the pan, followed by half of the chips and half of the cheese, then repeat. Bake 15-20 minutes until heated through and cheese is bubbly.

Chicken in a Crockpot

6 chicken breasts

2 pkgs chicken taco seasoning

3 cups pico-de-gallo

2 cups Better Than…Brand salsa (your preferred heat level)

½ cup water


Place chicken in a crockpot and sprinkle seasoning over the chicken. Pour pico-de-gallo and water over the chicken.


Cover and cook on low heat for 6-8 hours.


When chicken is cooked through, use a fork to shred it in the crockpot.


Pour in salsa and heat until warm.


Serve in tortillas with cheese, sour cream, and/or guacamole.

Chicken & Rice Burritos

Here at the BTB family, we like to EAT! If you have some leftover chicken, instant rice, and some Better Than…Brand salsa, a great meal can be had by all in under 20 minutes!


Servings: 8-10 burritos


2 cups chicken, cooked and chopped/shredded

1 TBSP garlic powder

1 pint Better Than…Brand salsa (your favorite heat level)

2 cups water

1 chicken bouillon cube

2 cups instant rice

8-10 flour tortillas

Toppings of your choice (refried beans, cheese, sour cream, etc.)


Bring salsa, water, garlic powder, bouillon, and instant rice to a simmer. Cover and cook until rice is tender. Stir in chicken and warm through.


Top flour tortillas with rice mixture and whatever toppings you’d prefer. Roll up burrito-style and enjoy!
